Discover our Dry Aged Branzino — a whole fish (600–800g) aged for 10 to 14 days under precise temperature and humidity-controlled conditions. The result? A fish that transcends the ordinary: richer depth, a silky melt-in-your-mouth texture, and a clean, refined finish that no fresh fish can replicate.

Dry aging removes excess moisture, concentrates natural flavors, and breaks down muscle fibers — delivering a buttery, nutty, and deeply savory eating experience. Unlike ordinary fresh fish, our Branzino develops a firmer, more defined flesh that holds beautifully on the grill, in the oven, or under the broiler. The process also eliminates the unpleasant fishy odor, leaving behind a cleaner, more elegant taste that impresses even the most discerning palates.

How it’s packed & shipped
Every order is cut to order and sealed in AquaSeal®, a breathable vacuum film that keeps fish fresher longer. Orders are packed on ice in insulated packaging and shipped Monday to Friday. Free shipping on orders over $299. Local delivery is free in Brooklyn, most of Queens, and parts of NY, NJ and Upstate.
Kosher certification
Most of our fresh fish is processed under our Legend of Jona brand, held to the strict supervision of CRC Kosher. Every fish is inspected fish-by-fish by trained mashgichim for the fins and scales that make it kosher. Each product’s specific hechsher is printed on its label.
Storage & freshness
Keep refrigerated and enjoy within about a week, thanks to the breathable AquaSeal® film. You can freeze at home for up to 6 months. Our fresh fish is never previously frozen.
