Buying a salmon side with us gives you two options: skin on or skin off. Keeping the skin on can add flavor to its meat when cooked and provide a protective layer between the hot pan and the soft meat. It also makes it easier to move the salmon around on the pan when the skin is on instead of trying to move the spatula under the delicate meat of the fish. However, if you are averse to skin or plan to poach your salmon, it is recommended that it be cooked without its skin and we offer that option as well.
