Whitefish are a mildly, slightly sweet flavored fish most often found in the deep, cold waters of North America, Asia, and Europe. The whitefish is often considered to be one of the best freshwater fish and this is because of its flavor. Since whitefish live in icy cold water, they have a very high oil content which lends to the medium-firm and buttery texture. The mild flavor of the whitefish makes its level of sweetness interchangeable depending on the seasonings used when cooking it.

Smoking whitefish juxtaposes the natural sweetness of the fish which, rather than competing  with each other, the polar flavors actually complement and enhance each other. Our whole smoked white fish is sold as a whole fish that weighs approximately 1.80 pounds.
